Home made fajitas


Simple healthy meals….

Marinate a piece of rump in the juice of 1 lime, half a long green chilli, a teaspoon of cumin powder, half a bunch of coriander, a clove of garlic and some grated ginger.

Meanwhile make your guacamole with 1-2 smashed avocados, the other half of chilli and coriander, another lime, plenty of salt, half a tomato and half a Spanish onion. Taste and season further if required.

Cook up your steak to medium rare, and let rest. While it is resting fry up some Spanish onion and thinly sliced capsicum. Thinly slice the steak. Serve with your heated tortillas, the fried up onion / capsicum, sour cream, lettuce and the guacamole.

Simple and healthy!!
